Serves 2-4



•50g dripping

•2 onions, sliced

•500g sliced potatoes

•Juices/jelly left overs from previous roasts




1.Put the dripping into a heavy-based pan and allow to become smoking hot

2.Add the onions and potatoes with some seasoning then lower the heat.

3.Cover closely and cook gently for up to 2 hours.

4.When cooked, stir up with a spoon. Good stovies must cook without burning and without the lid being lifted during the cooking although check progress after an hour.

Various leftovers can be added for extra flavour such as the juices/jelly left over from roasting and/or pieces of left over meat from previous meals.

This is an ideal dish as an accompaniment to cold turkey or chicken.
